Low-carb Lasagna Recipes

Not only is lasagna delicious, comforting and filling, it can be a great choice for a make ahead or freezer meal that is perfect for tired mothers-to-be. Unfortunately classic versions of this dish are full of carbs that those with gestational diabetes can't overindulge in. The challenge is trying to find creative ways to lower or replace some of those carbs.

Ideas for this include:

  • Using rice or other gluten-free noodles 
  • Using whole grain versions of traditional noodles 
  • Making a short stack lasagna that uses fewer noodles and thick layers of veggies and sauce in between
  •  Replacing the noodles altogether with sliced eggplant or zucchini
